Roll the whole oven rack in, no tray-by-tray transfer

Moving forty trays from the combi oven to a holding cabinet one at a time is the most labour-intensive ten minutes in any banquet kitchen, and the point where most tends to go wrong. Banquet Master takes the oven rack trolley whole, so forty handling steps become one and the risk of burns and spills falls with them. It suits hotel banquet halls and wedding venues, school and large-scale catering kitchens, arenas and event spaces.

Compatible with Rational oven racks, confirm the model before ordering

Banquet Master is a holding cabinet for combi oven rack trolleys, not an oven. It comes in two rack configurations, one for Rational SCC and one for Rational iCombi: the 20 model takes a trolley of 20 × GN1/1, the 40 model takes 40. The two rack formats differ in size, so check the combi oven on site before ordering. For racks or trolleys from other brands, send us the model and Applied Kitchens will confirm compatibility with the factory.

Active heating holds food longer than a thermal cover

A thermal cover only slows food on its way to cold. Banquet Master heats actively with adjustable control, extending the window in which food is still fit to serve. That matters most at banquets served in waves, where the gap between the first plate and the last runs long.
